We are heading back to the kitchen in this week’s Nerdconomics! Today we are celebrating everyone’s favorite plumber - Mario - by making a mushroom stuffed dish that is sure to make you feel like you just got an awesome power-up!
The recipe as presented is suitable for those on a gluten-free, grain-free, dairy-free, vegetarian, vegan, or Paleo diet, and with the noted changes could easily be made to fit the Autoimmune Protocol diet. Enjoy!
Mario’s Mushroom Stuffed Mushrooms
Time to Make: Approximately 1 hour
1 tbs cooking fat (lard, tallow, bacon fat, butter, coconut oil, etc.)
1 medium yellow onion, finely chopped
3 cloves garlic, minced
1 stalk celery, finely chopped
1 carrot, finely chopped
1 cup mushrooms, finely chopped
1 cup dark leafy greens (collards, spinach, etc.), finely chopped
1 tbs fresh thyme
1 tbs fresh rosemary, minced
¼ tsp sea salt
¼ tsp pepper (omit for Autoimmune Protocol)
4 large portobello mushroom caps
1. Preheat oven to 400 degrees F.
2. In a medium skillet melt the cooking fat and sauté the onion over medium heat for 2-3 minutes. Add garlic and heat for another minute. Add the celery, carrot, chopped mushrooms, leafy greens, thyme, rosemary, salt, and pepper and cook for another 3-5 minutes.
3. Clean, dry, and remove the stems from the mushroom caps. Fill the caps with the heated veggie mix. Place in the oven for 30 minutes.
4. Remove from oven and serve warm.
